  • 2 lbs ground beef
  • 1 Roma tomato finely diced
  • 1/2 white onion finely diced
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 1/2 tsp garlic salt
  • 1 tsp pepper

Cheese sauce:

  • 8 oz mild cheddar cheese
  • 3 tbsp butter
  • 3 tbsp flour
  • 12 oz evaporated milk
  • 1/2 cup whole milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 3 tbsp pickled jalapeños

For preparation:

  • 1 bag of tortilla chips
  • ½ cup cucumber finely diced
  • ½ cup jalapeno finely diced
  • ½ cup olives
  • ½ cup tomatoes finely diced
  • 1 whole lettuce
  • Garlic sauce
  • Salsa sauce

  1. Preheat a large pan and put some right amount of oil. Once the pan is preheated add the onions and tomatoes cook it until brown. After that, you can add ground beef and season it with cumin. Paprika, chili powder, oregano, salt, and pepper.
  2. Then mix until well combined and cook the ground beef until brown. Once done, transfer it into a strainer to remove excess oil and let it rest while making your sauce.

Cheese sauce:

  1. Preheat a saucepan into medium heat and add some butter. Once the butter is melted add the pickled jalapenos and cook it until soft. Make sure to often stir the jalapenos to avoid burning. Once done, remove the jalapenos and make sure to drain all the butter from the jalapenos and add flour and mix it well until it thickens the butter.
  2. Also, add half of the evaporated milk and continue to stir until it thickens and add the remaining evaporated milk. Then add half of the mozzarella cheese and continue to stir until the cheese melts. Also add the remaining mozzarella cheese along with the milk and season it with paprika, salt, and black pepper then continue to stir until the cheese melted. Once the cheese has melted turn off the heat and it’s time to prepare the nachos in a bowl.

  1. In a large bowl, layer the lettuce, tomato, cucumber, jalapenos, ground pork, and olives. Then add the sauces and cheese mixture and top it with tortilla chips.
