Lamb Chops with Homemade Gravy


Lamb chops have a distinctively rich and savory flavor. You may grill them or fry them in a cast-iron skillet (or regular pan). Perfect for dinner parties, and this quick-cooking lamb chops also add variety to weeknight meals. Once you try these lamb chops, you will never look back!

Ingredients: 

  • 750g/ 1.5lb lamb chops (loin chops, forequarter, cutlets)
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • 1 tsp ground pepper

For the Homemade Gravy: 

  • 2-3 tbsp butter (unsalted)
  • 5 tbsp flour
  • 1 cup chicken broth
  • 1 ½ cup beef broth
  • 1/4 tsp ground black pepper

 

Procedure:

  1.  Remove lamb chops from the fridge at least 30 minutes before cooking time. Blot them dry with a paper towel and season generously with salt and cracked black pepper.
  2. Heat a stainless steel or cast iron skillet over medium high heat, add the oil, and sear the lamb chops for about 2 ½ minutes per side.
  3. After searing both sides, sear the fat cap for about a minute. Once done, turn off the heat, remove the lamb chops, and transfer them into a wire rack.

For the Homemade Gravy: 

  1. Melt butter in a pan over low heat. Add half of the flour, constantly stirring, then add the rest.
  2. Cook until the color of the flour turns to medium brown. Add the liquid slowly and continue whisking until it’s completely incorporated.
  3. Make sure there are no lumps remaining (much better to use a wire whisk). Add ground black pepper.
  4. Bring the gravy to a boil, simmer for a few minutes until gravy reaches the consistency you prefer, takes 3-5 minutes.
  5. Time for plating! On a clean plate, add the seared lamb chops, side it with steamed asparagus or mashed potato, and drizzle some homemade gravy on the lamb chops’ top.
