Chocolate Almond Cake

Fluffy Chocolate Almond Cake with homemade chocolate frosting tops with rich and delicious roasted almonds that adds a little crunch in every bite!



For the cake:

  • 5 eggs
  • 120 gr granulated sugar
  • 160 gr all-purpose flour
  • 1 tsp baking powder
  • 1 tsp almond extract
  • 40 gr melted butter
  • 60 gr roasted chopped almonds (blanched to peel easily, gave a quick pan roast, and chopped) 

For the frosting:

  • 6 ounces semi-sweet chocolate
  • 2 Tablespoons coffee
  • 1 ½  stick butter 



  1. Grease and line a 10-inch (25cm) springform pan (with a removable base) with parchment paper. Separate egg yolks from whites. Preheat oven to 180°C (350°F).
  1. Melt chocolate and butter over low heat until smooth. Let it cool slightly. Add yolks one at a time and stir well. Combine flour, cocoa, baking soda, ground almonds, salt, and almond extract.
  1. Whip egg whites until foamy using a mixer. Gradually add sugar and whip until soft peaks form. Gently fold the whipped whites into the chocolate mixture.
  1. Pour batter into prepared pan and bake for 40-45 minutes. Let it cool completely and refrigerate to set for at least 2 hours.  

For the frosting: 

  1. Melt your chocolate with the coffee in a double boiler. Allow cooling 3 minutes then add your butter (room temperature butter) in small chunks and mix into your chocolate with a mixer or whisk.
  1. Add 2 chunks at a time, mix in completely. Then add 2 more chunks and mix completely. Do this over and over till incorporated.
  1. Spread over cake. Decorate with roasted almonds.
