Bake a Mother’s Day Cake

Mom is surely sweet, so bake that is almost as sweet as she is to show your appreciation, like this Strawberry Lemonade Layer Cake from Southern Living that tastes like spring! This cake is made with tender layers of lemon cake with a tangy strawberry lemonade jam. Topped with a delicious strawberry frosting, this cake tastes like a dream. It does take up to two days to assemble, so it’s best to get started sooner than later!



·         1 cup butter, softened

·         4 large eggs, separated

·         2 cups granulated sugar

·         3 cups flour

·         1 tablespoon baking powder

·         1/8 teaspoon table salt

·         1 cup milk or milk alternative

·         1 tablespoon lemon zest

·         1 tablespoon lemon juice

·         Shortening


·         2 cups chopped fresh strawberries

·         ¾ cup sugar

·         ¼ cup fresh lemon juice

·         3 tablespoons cornstarch


·         1 8oz package of cream cheese, softened

·         2/3 cup sugar

·         2/3 cup chopped fresh strawberries

·         1 ½ cups heavy cream

·         3 tablespoons fresh lemon juice

·         1 drop pink food coloring gel (optional)


Directions for the Cake:

1.       Preheat the oven to 350 degrees Fahrenheit.

2.       Beat butter until creamy in a mixing bowl, then gradually add in sugar, beating until light and fluffy.

3.       Add 1 egg yolk at a time, beating until completely blended after each.

4.       Stir flour, baking powder and salt together and add to butter mixture alternately with milk. Beat at low just until blended.

5.       Stir in lemon zest and juice.

6.       Beat egg whites in a bowl until stiff peaks form. Gently stir in 1/3 of the egg whites into the batter, then fold in the remaining whites.

7.       Spoon batter into four greased and floured 9-inch round cake pans.

8.       Bake for 16 to 20 minutes or until a tester inserted in the center comes out clean. Cool for 10 minutes in pans on wire racks. Remove from pans to wire racks and cool completely.

Directions for Strawberry Lemonade Jam:

1.       Process strawberries until smooth in a blender, pressing through a wire mesh strainer into a 3.5 quart saucepan. Squeeze out juice with the back of a spoon and discard pulp. Stir in sugar.

2.       Whisk cornstarch and lemon juice, gradually whisking into the strawberry mixture. Bring to a boil over medium heat, whisking constantly for one minute. Remove from heat and cover with plastic wrap. Chill for two hours or until cold.

Directions for Strawberry Frosting:

1.       Beat cream cheese together with 1/3 cup of sugar until smooth, adding in strawberries (and food coloring if desired). Beat until well-blended.

2.       Beat lemon juice and heavy cream until foamy, slowly adding the remaining 1/3 cup of sugar until stiff peaks form. Fold half of the cream mixture into the cheese mixture, followed by the remaining cream mixture. Use immediately.

Directions for Layering Cake:

Place one cake layer on a serving platter, spreading about ½ cup of strawberry lemonade jam over the top. Leave ½ inch border around the edges. Spoon 1 cup frosting into a frosting bag and pipe a ring of frosting around the cake layer just inside the top edge. Repeat with second and third layers. For the last layer, top the cake and spread the remaining frosting on top and sides of the cake.
